Aging Process Fermented partly in new Hungarian oak barrels (136-litre small barrels) and partly in stainless steel tanks; 70% aged in oak barrels for 3 months with weekly lees stirring (batonnage), then 3 months resting; maturation in 136 and 210 litre barrels.
Fermentation Fermented 8-12 days in wooden barrels and stainless steel tanks to preserve freshness and complexity.
