Aroma Christmas cake aromas with dark cherries, blackcurrant, a hint of mint, dark cocoa, savoury meats, and hints of cedar.
Palate Full, rich and lingering flavors of dark black fruits, savoury meats, dried herbs, with a fine texture and firm dry tannins.
Finish Exceptionally long finish exhibiting a hint of black olives, dry and textured.
Food Pairing Pairs well with meaty stews, grilled steaks, tomato pasta such as Parmigiano Melanzane, and hard cheeses.

Aging Process Maturation takes place in small 225 liter French barriques, of which 40% is new, lasting for 22 months with regular rackings. The wine receives a light egg white fining before bottling with no filtration.
Fermentation Fermentation takes place by indigenous yeasts in small open wooden fermenters, lasting up to 14 days with regular punch downs. Malolactic fermentation occurs in barrel, after which the wine is racked and returned to barrel for further maturation.

Harvest Desc Grapes are hand harvested at peak maturity, delivered to cellar, cold stored overnight at 4°C, de-stemmed, sorted, crushed, and fermented in small open wooden fermenters with indigenous yeasts.

Miles Mossop is a respected boutique winemaker in Stellenbosch, South Africa, elected to the Cape Winemaker’s Guild in 2012. The Max wine is a blend expressing the individuality of exceptional vineyard sites, produced in limited quantities.
