Aging Process Aged on lees for a short period and then bottled for about 3 months before release. No oak barrels are used; the wine is refined in stainless steel and bottle only.
Fermentation Fermented in temperature-controlled stainless steel vats after a gentle hand-sorting and soft pressing of the Cortese grapes.

Interesting facts
Enrico Serafino has been producing Gavi wines since 1914; the Cortese grapes are sourced from the best vineyards around the town of Gavi; the wine is unoaked and spends a short time on its lees to develop a richer mouth-feel.
