Palate Energetic and tense with a fantastic chalky texture, opening up with orchard fruits, honeycomb, strawberry tart, and crème pâtissière, framed by chiseled acidity and a vivacious, finely detailed mousse.
Finish Powerful, swirling, vinous tension with notes of chocolate, pink peppercorns, and kirsch blooming on the palate, rounded off by a wonderfully long, positive bitterness.
Food Pairing Spicy sauced shellfish, creamy risottos made with aged cheeses, truffle and parmesan risotto.

Interesting facts
Rare Champagne was originally created as Piper-Heidsieck's prestige cuvée to commemorate the presentation of the first cuvée to Queen Marie Antoinette in 1785. It became an independent House in 2018.
