Aging Process Aged 12 months in used French oak barrels (no new barrels used) from the Troncais forest, after malolactic fermentation. Whole cluster fermentation with spontaneous yeast, minimal sulfur added at the start of fermentation (approx. 5 mg/l). Bottled unfined and unfiltered, gravity used for bottling.
Fermentation 100% whole cluster fermentation in wooden vats for about three weeks, spontaneous fermentation without chemical yeast
